The Popeye Special by Mustafa – Chief Executive Officer

The Popeye Special is a perfect nutritional meal, all for less than £1.00…and just how my hala makes it!!

The spinach in this recipe counts towards your five a day and helps in having a well-balanced and healthy diet.

The halloumi cheese/hellim, originating from Cyprus, is an excellent source of calcium which is vital for your teeth and bones.

And finally, the eggs, which are rich in protein and Vitamin B12.

Ingredients:

 

VEG318: Greens Frozen Leaf Spinach (Bags)-1x1kg

CHE118: Ozlem Halloumi Cheese/Hellim-4x250g(nom) 1 packet (use 2 slices, 50g each)

EGG008: Free Range Medium Eggs (Size 3)-1×60

 

Optional Ingredients:

Lemon

Salt

Black Pepper

Red Pepper Flakes

Step 1:

Put the frozen spinach into a sieve and leave to defrost and drain.

Step 2:

Cut the halloumi into 5 slices. Use 2 slices only, approx. 50g each.

 

Step 3:

Place the halloumi in a non-stick frying pan, without any oil on a medium heat.

Step 4:

Turn the halloumi over once it is browned off and equal on both sides or once at the desired cooking level. 

Step 5:

Remove the halloumi from the frying pan and place on a plate to cool down.

Step 6:

Use the same frying pan and again with no oil, place the defrosted and drained spinach (approx. 300g for two people) into the frying pan on a medium heat. Stir continuously with a wooden spoon for approx. 7-10 minutes or once at the desired cooking level.

Step 7:

Take 2 eggs 

Step 8:

Break the 2 eggs into the spinach and stir continuously.

 

Step 9:

Cook until the eggs have firmed up.

Step 10:

Add the 2 halloumi slices on top of the spinach.

Step 11:

Turn the heat down slightly and place the lid on top of the pan for approx. 2 minutes…

Step 12:

…and serve!

Step 13:

For that special Cypriot taste squeeze a splash of lemon and sprinkle salt, black pepper or red pepper flakes for that extra spice.

Try with a slice of fresh toasted bread!
