Pukka Peppers – Stuffed peppers with pesto and goats cheese

This Simple recipe is full of flavours and textures.

Stuffed peppers make a great mid-week supper or a dinner party starter – so good that even non vegetarians will love them!

Prep Time: 15 Minutes

Cooking Time: 25 Minutes

Serves: 4


VEG360 – 4 Small red Onions, peeled and quartered

SAU380 – 8 tsp. Green pesto

CHE039 – 200 gms goats cheese

4 Plum tomatoes, halved

2 Medium Courgettes, thickly sliced

2 medium leeks, trimmed and finely chopped

2 medium red Peppers

2 medium Yellow Peppers

6 tbsp. olive oil

Salt and Pepper

Basil leaves to serve

Step 1:

Heat the oven to 200oc/gas mark 6

Step 2:

Put the tomatoes, sliced courgettes and red pepper into a bowl, season with black pepper and salt then toss together with 4tbsp of the Olive Oil. Tip into a large Roasting tin.

Step 3:

Heat the remaining oil into a frying pan, add the Leeks and cook for 5 minutes until softened. Remove from the Heat.

Step 4:

Half the peppers and discard the seeds, spoon the leeks into the cavity of each pepper then add a 1 tsp of green pesto into each pepper.

Step 5:

Remove the rind from the Goats Cheese and cut into eight pieces, placing a piece into each pepper. Place onto a baking tray.

Step 6:

Place both dishes into the oven and bake for around 25 minutes

To serve Garnish with the Basil.
