BAKED CHEESECAKE WITH PEACH SLICES BY AGNIESZKA FROM HR

Smooth and creamy cheesecake always reminds me of my home. For special occasions or perfect with coffee in the afternoon.

 

Ingredients:

CHE073 – Buko full fat soft cheese

SAN013 – Kerrymaid butter

VEG202 – Peach slices in a juice

Plain Flour

Sugar

Eggs

Custard powder

Baking powder

Vinegar

 

Step 1:

Cheesecake base

Use 750g of plain flour, 250g kerrymaid butter, 4 yolks, 1 tea spoon of vinegar and 1.5 tea spoon of baking powder.

Step 2: 

Mix the ingredients together until base doesn’t stick to your hand.  

Step 3:

Cut the base in a half and put 1 half in to freezer.

Step 4:

Brush the baking tray with the melted butter to lightly grease. Roll out the second half of the pastry.

Step 5:

Put in to baking tray.

Step 6:

Cheese

1kg of buko full fat soft cheese, 100g of custard powder, 250g of sugar, 125g of melted butter, 5 yolks and 1 tea spoon of baking powder.

 Step 7:

 Use mixer to combine ingredients.

Step 8:

Place 4 egg whites into a large, tall bowl and set your mixer to medium-high.

Step 9:

It should then form stiff peaks.

Step 10:

Add to the cheese mixture using a spoon.

Step 11:

Place cheese on the top of pastry in a baking tray and then add peach slices.  

Step 12:

Remove other half of pastry from the freezer and shred on the top of the cake.

Step 13:

Place in pre heated oven for an hour at 180c.

Step 14:

Once it is golden brown, remove from oven.
