SALMON FILLET WITH LIME JUICE AND COCONUT CREAM BY AGNIESZKA FROM SALES

Fillet of salmon served with vegetables and sauce with lime juice and coconut cream.

A very delicate and delicious dish that will impress everyone.

Ingredients:

OIL062: Antica Tradizione Extra Virgin Olive Oil-1x5L

FIS249: Pacific West Skinless Boneless Salmon Portions-1×10

DAI028: Cravendale Whole Milk-1x2L

10 g of garlic

Salt and pepper

dried tarragon

green asparagus

2 Tbsp freshly grated parmesan cheese

spring vegetables

100 ml coconut cream

100 ml milk

lime

Honey to taste

fresh basil

50 g of butter

Step 1:

Clean fillets of salmon , drizzle with olive oil, add a little tarragon, garlic and salt and orange pepper.

Step 2:

Let the prepared fish stand for 10 minutes in a cool place, fry in very hot pan.

Step 3:

Clean asparagus and cook in salted water. Drain.

Step 4:

While the asparagus are still hot, toss them in a  pan with the olive oil, Parmesan, and lemon juice. Salt and pepper to taste.

Step 5:

Seasonal vegetables cook in salted water.

Step 6:

Sauce with lime leaves and coconut milk: in a hot  pan put a bit of butter, honey and cook until get it a little brown( caramelized) then add the juice with a squeezed lime. Then add the coconut cream, milk and season to taste. At the end of cooking add the chopped basil.
