PAN-FRIED SEA BASS WITH EGG FRIED RICE AND FENNEL SALAD BY HUSEYIN FROM PRODUCT GROUP

Pan fried sea bass with a touch of Asian style egg fried rice accompanied with Mediterranean, refreshing, anise flavour salad.

Prep time: 5-10 minutes

Cook time: 25 minutes

Cost: ₤ 5-6

Serves: 2

JJ Ingredients:

OIL062 Antica Tradizione Extra Virgin Olive Oil-1x5L

RIC036 Laila Basmati Rice-1x5kg

FIS148 Ocean Catch Sea Bass Fillets (140- 180g)-1x1kg

Rice Ingredients:

1 cup rice,

1 ½ cup of water,

1 tbs of olive oil,

 A pinch of salt

Fennel Salad Ingredients:

Half fennel,

8-10 pieces cherry tomato,

One medium size red onion,

Some dill,

Quarter of a lemon,

1-2 table spoon capers,

2-3 table spoon olive oil,

2 table spoon soy sauce.

Pan Fried Sea Bass Ingredients:

2 sea bass fillets,

Pinch of salt, pinch of black pepper, and pinch of oregano,

Quarter of a lemon,

3 table spoon olive oil.

Step 1:

Preparing Plain Rice

Heat the water with olive oil and salt, when it’s boiling, add the rice and stir for 2-3 min..

Place the lid on the pot, keeping it tilted to allow steam to escape. When you can see holes or craters in the rice put the lid on tight. Turn the heat to low and simmer for 5 min or until the rice seems dry. Set a side and leave to cool.

Step 2:

Fennel Salad

Chop the fennel, red onion and dill, and half the cherry vine tomatoes. Mix with tsp of capers and olive oil. Add soya sauce and juice of quarter of lemon.

Step 3:

Egg Fried Rice

Heat 1 tbsp of olive oil in large pot when is steaming hot add the rice and stir. Add 2 eggs mixed with some soya sauce and keep stirring. Add chopped spring onions and stir for 2 minutes. Cover it with lid and set a side.

Step 4:

Pan Fried Sea Bass

Season the defrosted sea bass fillets with salt and black pepper, place on hot frying pan with olive oil skin side down. Fry for 3 min and turn the fillet once its edge becomes golden colour.

Step 5:

Plate Up

Caution: Mind your fingers while eating.
