This cake is very colourful, easy to make and as it’s topped with fruit it almost feels guilt free!

This would be perfect to take out onto your street party to celebrate.



Cake Base
175g (6 oz) self-raising flour
1 teaspoon baking powder
175g (6 oz) Stork Baking Liquid
175g (6 oz) caster sugar
EGG011: 3 medium eggs
DAI006: 2 tablespoons milk
Zest of 2 citrus fruits (lemon, orange)

Citrus syrup:
Juice of 2 citrus fruits, strained
115g (4 oz) caster sugar

284ml carton whipping, whipped
VEG268: 250g (9 oz) strawberries
VEG289: raspberries, blueberries
Black grapes 

Step 1:

Sift the flour and baking powder into a large mixing bowl, add the remaining cake ingredients. 

Step 2:

Beat with a wooden spoon until smooth.

Step 3:

Spoon the mixture into two greased and base lined 20cm sandwich tins, or one 20cm square cake tin.

Bake in a preheated oven at 180 C / 160 C fan / Gas 4 for 30 minutes in the sandwich tins or 45 to 50 minutes in the square tin or until cooked. Turn out on to a wire tray to cool.

Step 4:

Put the citrus juice and sugar in a saucepan and heat gently until the sugar has dissolved.

Step 5:

Cut the cake into two halves, whilst cake is warm drizzle the syrup over so that it soaks into the cake

Step 6:

When cold, sandwich together with half the Cream.

Step 7:

Reserve some Cream for decoration and spread remainder over the top of the cake. Decorate with fresh berries in the shape of a Union Jack.

Step 8:

Pipe with remaining Cream to decorate.
