KAGIT KEBABI/KEBAB IN PAPER BY ROBERTO FROM STOCK CONTROL

This is a Turkish dish cooked in a baking paper, the paper keep the moist in and allows the meat to further cook making it very tender.

I used beef but you can use lamb as well.

Preparation: 1 hour

Cooking: 1 hour

JJ Ingredients:

MEA145: LHF Organic Beef Strips(Single)-1x500g
VEG201: Greens Frozen Choice Peas(Bags)-1x1kg
VEG194: Greens Frozen Baby Carrots(Bags)-1x1kg
VEG141: Gomo/Riverdene Chopped Tomatoes-1×2.6kg

Additional ingredients:

Shallots
Potato
Olive oil
Salt
Black pepper
Baking paper

Step 1:

Peel the shallots, cut the potato in dice, defrost the meat, baby carrots and peas.

Step 2:

Mix the meat, shallots, dice potatoes, baby carrots and peas in a large bowl add some olive oil, salt and black pepper.

Step 3:

Cut 4 squares of baking paper 40x40cm (You can increase the amount of the mix to get more portions).

Step 4:

Divide the mix in four portions. Place one portion of mix in the centre of the paper.

Step 5:

Top with chopped tomatoes one spoon of olive oil, salt black pepper.

Step 6:

Fold.

Step 7:

Fold at the back.

Step 8:

Make a puncture.

Step 9:

Place in a baking tray and brush with water.

Step 10:

Bake in a preheated oven 180C (356F) for 1 hour.

Step 11:

Once cooked place in a plate cut the paper and serve with pilau rice and salad.
