Tomatoes and basil are two ingredients that make a near perfect combination every time. It is really simple, quick and amazingly tasty pasta dish which always hits the spot and will impress your family and your friends.

This is Jamie Oliver’s recipe from his 30 minute meals TV series and cookbook. Jamie Oliver is one of my favourite chefs and I love his style of cooking, simple and so flavoursome.

JJ Ingredients:

PST041 Pasta Reggia Spaghetti

VEG246 Sapori D’Italia Mistoliva Mixed Marinated Pitted Olives

CHE056 Grated Grana Padano(Parmesan)Cheese

VEG498 Single Sombrero Peeled Plum Tomatoes

Other Ingredients:

10 tbsp. extra virgin olive oil

2 cloves of garlic, peeled and finely chopped

400gr plum or chopped tomatoes

10-12 large fresh basil leaves, torn into pieces

sea salt and freshly ground black pepper

1/2 tsp. red pepper flakes

Step 1:

Heat the olive oil in a large, deep pan over medium-high heat. Add the garlic. Cook until the garlic is softened, approximately 2-3 minutes.

Step 2:

Add the tomatoes with all their juice. Crush the tomatoes using a potato masher or the back of a wooden spoon.

Step 3:

Add the basil, olives, a good pinch of salt, and several grinds of black pepper and red pepper flakes. You can chop the basil if you like, but for this recipe I like to just tear it into large pieces. Feel free to add even more fresh basil if you want to. Cook for ten minutes or until the tomatoes are well softened.

Step 4:

Cook your spaghetti in salted boiling water according to the packet instructions until al dente (approx. 7 min).  And drain the pasta.

Step 5:

Add the hot, cooked pasta to the pan and toss or stir to combine. If you feel that the tomato-basil sauce is a little too thick, add a spoonful or two of the pasta cooking water to thin the sauce.

Step 6:

To serve, top with Parmesan and a little more fresh basil.
