Summer in a Glass – Blackberry & Honeycomb Syllabub By Terry From HR

The inspiration for this Dessert came from the wild blackberries growing in the garden with the Bee’s taking the nectar from the flowers.

Did you know” that blackberries have been around since 8,000 BC and contrary to its name, it’s not a berry but connected to the Rose Family!!

 Not only is it delicious to eat, great to look at but its bursting with nutrition including Vitamin’s C & K, antioxidants, folic acid and manganese.


Blackberry Compote

250g Blackberry’s

50ml Fruit Liqueur

50g Honey



DRK827: 50ml White Wine

300ml Double Cream

25g Caster Sugar

25g Honey

Zest & Juice of half Lemon

Blackberry Puree

Step 1:

Make the Compote.

Place the ingredients in a pan and cook for 10 minutes.

Put half of the mix to one side.

Sieve the other half of the mix to make a puree.

Step 2:

Make the Syllabub.

Place the sugar, honey, wine and lemon zest & juice in a mixing bowl.

Add the whipped cream.

Add blackberry puree and chill.

Step 3:

Spoon the blackberry compote into the glass.

Step 4:

Then add the Syllabub, don’t forget to lick the bowl!

Step 5:

Garnish with a fresh blackberry and a piece of honeycomb.
