Aubergine Delights By Ozgul From Sales

Aubergine Delights –with its original name “Islim Kebab”- is known to be an old Ottoman dish which is made of aubergines stuffed with soft beef in a rich tomato sauce and grated cheese that done my way.

This is a great tempting presentation dish that you can serve as a main or side dish.Its steamy,cheesy and meaty delicious taste is just irresistible!

Preparation : 30 minutes

Cooking       : 40 minutes

Serves          :  4- 6

JJ Ingredients

OIL051: JJ Sunflower Oil-1x5L

 OIL065: Filippo Berio Olive Oil-1x2L

 MEA152: Brockhurst Halal Diced Beef-1×2.5kg

 CHE092: Vittorio’s Grated Cheddar Cheese-1x2kg

 FLO030: Wrights Plain Flour-5×1.5kg

 SPI392: Schwartz for Chef Ground Black Pepper-1x400g

 SPI382: Schwartz for Chef Oregano-1x150g

Other Ingredients

 

3 Aubergines

1 Green pepper (sliced into 1inch squares)

2 tbsp tomato paste

2 1/2 tsp salt (adjust to your taste)

1 large onion (finely chopped)

2 tomatoes

Baby tomatoes (Half sliced)

Toothpicks

Step 1:

Peel the aubergines lengthways in strips like a zebra.

Step 2:

Slice the aubergines lengthways about ½ inch thick.

Step 3:

Sprinkle with some salt to both sides,leave it for 15 minutes and dry it with a paper towel.Then dip in flour to both sides.

Step 4:

Fry both sides of the aubergines with sunflower oil until the colour gets golden brown.

Step 5:

In a pan put olive oil, finely chopped onion and diced beef and let it cook about 7 minutes.

Step 6:

Add chopped tomatoes,tomato paste,salt,black pepper,oregano and any other seasoning for your taste.Cook it about 8 minutes and add 1 cup of water.Turn heat on low cook let it cook for another 10 minutes.

Step 7:

On a board place the aubergine slice vertically and place the meat mixture (only couple of cubes of meat) on top of each slice.

Step 8:

Roll up the Aubergine slices and put one tootpick right in the center of the roll.

Step 9:

Put an half of the cherry tomato and square sliced pepper on top of each roll.

Step 10:

Place the aubergine rolls into a pyrex and spoon over the rest of the sauce from the meat mixture.

Step 11:

Sprinkle grated cheese all over the rolls.Preheat the oven 373F (180c) and place the dish on the middle rack of the oven.Bake it for 12-15 minutes until cheese begins to melt.

Step 12:

Serve on a dining  plate with rice, strained yoghurt and garnish it to your taste.
