Chocolate Truffle and Pistachio Torte & Pistachio Ice Cream By Shankar From QA

An indulgent dessert sure to satisfy your chocolate craving, bitter chocolate torte complimented by sweet and nutty pistachio.

A good combination of flavours and textures.

Chocolate Torte Ingredients:

100g/4oz amaretti biscuits,
400g/1lb dark chocolate (70 cocoa solids),
4 tbsp liquid glucose
650ml double cream
50g chopped pistachio nuts (unsalted, shelled) (SPI325)
Unsalted butter for greasing
Icing sugar (to dust) (SPI030)

Pistachio Ice Cream (ice cream maker) Ingredients:

3 egg yolks
350ml double cream
300ml whole milk (DAI005)
Few drops green colouring
Few drops almond extract
40g chopped pistachio nuts (unsalted, shelled)
110g caster sugar

Chocolate Torte

Step 1:

Line a 9 inch tin with baking paper, grease the sides and base with unsalted butter.

Step 2:

Crush the biscuits and place in a bowl.

Step 3:

Roughly chop pistachios and combine with biscuits.

Step 4:

Add mixture to tin.

Step 5:

Break the chocolate into a bowl (heat proof) add the glucose and melt over a pan of gently simmering water, once melted remove from heat and allow to cool slightly.

Step 6:

Whip the cream until it starts to become thick.

Step 7:

Add half to the melted chocolate and fold, add combined mixture to the rest of the cream and fold until even.

Spoon mixture into tin, cover with cling film and place in fridge, preferably overnight.

Pistachio Ice Cream (ice cream maker)

Step 1:

Beat the egg yolks and sugar to form a paste, add the milk.

Step 2:

Whisk double cream until thick and combine with mixture.

Step 3:

Add chopped pistachios and place in ice cream maker.

Step 4:

Spoon into container and freeze overnight.

The ice cream can also be made on a stove by making traditional custard then adding the nuts and freezing.


Step 1:

Remove torte from tin.

Step 2:

Cut a slice, lightly dust with icing sugar or cocoa powder and serve with ice cream.
