Garlic King Prawn & Mushroom Stuffed Squid Tubes By Ali From Transport

FIS295 Ocean Catch (11/20) Cleaned Squid with Tentacles

FIS376 Ocean Catch IQF P&D Vannanmei (16/20) King Prawns

SPI390 Schwarts for Chef Garlic Powder

OIL062 Antica Tradizione Extra Virgin Olive Oil

Garlic Cloves x 4

Medium Onions x 2

Chestnut Mushrooms x 6

Slice White/Brown Bread (Without Crust)

Fish Stock x 2

Table Spoon of Butter

Black Pepper

Hot Pepper Sauce x 2 Drops

Tomato Puree x ½ Teaspoon

18.7cl (Small Bottle) of Pinot Grigio


Tomatoes x 1

Cucumber x ½

Lime x ½

Step 1:

Finely chop the garlic.

Step 2:

Dice the onions.

Step 3:

One pot and one frying pan needed, splitting the mixture to two.

Pour 3/4 of the wine in the frying pan and dissolve 1 cube of fish stock. Add 2/3 of onion and garlic to the frying pan. Cook slowly on a low heat.

Step 4:

Chop the mushrooms finely.

Step 5:

Add mushrooms to the mixture in the frying pan.

Step 6:

Simmer gently till onion/garlic/mushrooms soften but not coloured.

Step 7:

Once onion/garlic/mushrooms are cooked, put aside in a bowl, leaving some juice in the frying pan.

Turn up the heat and add the raw king prawns.

Step 8:

Cook till pink, adding a pinch of garlic powder, black pepper and ½ a teaspoon of tomato puree.

Step 9:

Once king prawns are pink and cooked through, put aside.

Turn up the heat for the pot, containing the remaining wine, onion and garlic mixture, 1 cube of fish stock and 1 teaspoon of butter. Simmer gentle.

Step 10:

Crumble bread (without crust) in to bowl with the onion/garlic/mushroom mixture.

Step 11:

Chop the king prawns in to small pieces.

Step 12:

Add the chopped king prawns into mixture.

Step 13:

Remove the tentacle from inside the squid.

Step 14:

Add the tentacles in to the pot and fry on high heat.

Step 15:

In the meantime, stuff each squid, with the mixture in the bowl, using a teaspoon.

Step 16:

Using the toothpicks, secure the squid to hold mixture inside.

Step 17:

Drizzle extra virgin olive oil into the frying pan on full heat and place the squid carefully.

Step 18:

Cook for a couple of minutes each side, till slightly golden. Do not overcook.

Step 19:

Prepare salad garnish, consisting of cucumber, tomato and lime.

Step 20:

Place the squid on the plate with the tentacles and drizzle the juice from the frying pan evenly, using a spoon.

Ready to serve
