The Nutty Éclair by Shankar From QA

A tale of Hazel and Choux and a cream called Pat 🙂

A twist on a French classic…Chocolate Eclairs filled with Chocolate crème patissière, topped with chopped hazelnuts, makes 12.

Choux Pastry Ingredients:

150g plain flour

120g unsalted butter

4 medium eggs

300ml water

Pinch of Salt

Crème Patissière Ingredients:

1 eggs + 1 yolk

50g caster sugar

40g plain flour

300ml whole milk (DAI005: Fresh Whole Milk-(BlueCap)-1×2)

1 teaspoon vanilla extract

2 teaspoon cornflour (FLO024 JJ Corn Flour-1x3kg)

1 dessert spoon cocoa powder (SAU093: Freshers Cocoa Powder-1x500g)

Choux Pastry

Step 1:

Preheat oven to 200°C.

Cube the butter and place in heavy saucepan.

Step 2:

Add the water and heat until butter melts, bring to boil.

Step 3:

Remove from heat, add sifted plain flour and pinch of salt, stir vigorously until mixture forms a ball.

Step 4:

Leave to cool slightly, then gradually add beaten eggs, beating well to form paste.

Place into piping bags and pipe onto lined baking sheet, lines of approximately 6 inches in length and brush lightly with egg wash to achieve sheen.

Step 5:

Place in oven and bake for 10 minutes, reduce the heat to 170°C and bake for a further 20 minutes.

Remove from oven and make slits down one side, set aside.

Crème Patissière

Step 1:

Beat eggs and sugar until smooth, gradually stir in flour, cocoa powder, then milk.

Step 2:

Pour into small saucepan and bring to boil, stirring constantly.

Reduce heat and simmer for 3-5 mins, stirring to cook the flour thoroughly.

Add vanilla, you should be left with a thick cream.

Step 3:

Turn into a bowl and leave to cool, place cling film on surface of mixture to prevent skin forming.

Step 4:

Pour Crème Patissière into piping bag and pipe into choux buns achieving an even spread.

Melt chocolate over a sauce pan over simmering water, allow to cool gently before applying to buns, sprinkle with chopped hazelnuts and serve.
