Chicken Shish With Homemade Sweet Chilli Sauce By Betigul From Sales

Shish kebab (the word “shish” meaning “skewer” is a Turkish word) is a dish consisting of meat threaded on a skewer and grilled. Any kind of meat may be used; cubes of fruit or vegetables are often threaded on the spit as well. Typical vegetables include tomato, peppers, onions and mushrooms.
Chicken shish kebab dish is great for both outdoor barbecuing and oven grilling. It is light and delicious. It is so easy to make shish kebabs at home. If you combine vegetables and fruits along with your choice of meat, you literally have a meal on a stick.

JJ Ingredients:
- CHI306 Fresh Halal Chicken Breast Fillets
- SPI367 Schwartz for Chef Cayenne Pepper
- VEG206 Pointed Red Peppers
Sweet Chilli Sauce Ingredients:
- 500g fresh red chillies, stems trimmed
- 3 garlic cloves, peeled
- 750ml (3 cups) white vinegar
- 645g (3 cups) sugar
- 1 tablespoon Fresh lime or lemon juice
Instead of buying sweet chilli sauce, try making this easy recipe! It only takes a few minutes to put together, and you can find everything you need for at your local supermarket. There are no added chemicals or unhealthy ingredients in this homemade version, so it’s also healthier. Sweet chili sauce makes a superb condiment for many Thai dishes – excellent with chicken and fish as well as seafood.
Step 1:
Halve 100g of the chillies and place in the bowl of a food processor. Halve and deseed the remaining chillies. Coarsely chop and place in the food processor. Add garlic and 250ml white vinegar.
Step 2:
Process until finely chopped.
Step 3:
Place the chilli mixture, remaining vinegar and sugar in a large saucepan over a low heat. Cook, stir for 5 minutes or until the sugar dissolves.
Step 4:
Increase heat to high and bring to the boil. Reduce heat to medium and simmer, stirring occasionally, for 35-40 minutes or until the sauce thickens. Put in a fridge.
Chicken Shish Kebab Marinade:
- 2 lbs. cubed skinless, boneless chicken breast
- 3 tablespoons lemon juice
- 1 tablespoon extra-virgin olive oil
- 2 cloves garlic, finely chopped
- 1/4 teaspoon fresh or dry thyme
- 1/8 teaspoon cayenne
- Pinch of salt and pepper
Step 1:
Cut chicken into one inch cubes.
Step 2:
Mix the olive oil, lemon juice, garlic, cayenne, thyme, salt, and black pepper together in a large glass or ceramic bowl. Add the chicken and toss to evenly coat.
Step 3:
Cover the bowl with plastic wrap; marinate in the refrigerator for at least 2 hours.
PS: Overnight marinade gives chicken a wonderful moist & juicy taste.
Step 4:
Cut mixed peppers into one inch cubes.
Step 5:
Soak wooden skewers in water for about 30 minutes before use. Preheat an outdoor grill for medium-high heat; lightly oil the grill. Remove the chicken from the marinade and shake off excess liquid. Discard the remaining marinade. Alternately thread pieces of the marinated chicken with pieces of peppers and cherry tomatoes, onto the skewers.
Step 6:
Cook the skewers on the preheated grill, turning frequently until nicely browned on all sides, and the chicken is no longer pink in the centre, about 10 -15 minutes.
Step 7:
Serve chicken shish with a salad and homemade sweet chilli sauce.
