Su Boregi – Turkish Cheese Lasagne (Ottoman Cuisine) By Pinar From Sales

This borek is very famous all-over Turkey, especially in the Black Sea Region, in the north. The crispy outer layers, squeaky soft layers of lasagne-like sheets, warm and melting cheese taste in-between might be the reason for its popularity.

For making the layers of lasagne:

350 gr/ 3 cups Self raising flour (FLO031: wrights Self raising flour)

4 eggs (MIS103: Ousters Lion Eggs)

1 teaspoon of salt

1 teaspoon of Sesame Seeds (SPI344: Natco Hulled Sesame Seeds)

1 teaspoon of Nigella Seeds (SPI338: Natco Nigella Seeds)

1 tablespoon of vinegar

For the cheese filling:

250 gr feta cheese (CHE097: Yayla Turkish Feta Cheese)

1/2 cup of chopped fresh parsley leaves

For assembling and baking:

3 lt of boiling water with 1 teaspoon of salt added,

2 tablespoons of olive oil (OIL065: Filippo Berio Olive Oil)

150 gr butter (OIL019: Flora Margarine)

10-12 sheets of fillo dough (to go for the top and bottom layers of our borek – optional)

Step 1:

Mixed flour and eggs.

Step 2:

Mixed the dough ingredients and knead well and set aside for 15-20 minutes.

Step 3:

Divide the dough into 10-12 pieces.

Step 4:

Rolling pin to roll the sheets needs to be thin, long, and stick-straight.

The rolling pin should like picture roll each piece the same size as your tray.

Step 5:

Boil each pastry sheets individually for one or two minutes in salted boiling water.

Step 6:

Than plunge into a bowl of cold water.

Step 7:

Drain and layer the sheets in a baking tray.

Step 8:

Crumbling the feta and mixing with chopped parsley.

Step 9:

Put 5-6 fillo sheets as the top layer than put mixed feta cheese and chopped parsley.

Step 10:

Put some sesame seeds and nigella seeds. Then put in the oven for 180 degrees until golden which is around 30-35 minutes.

Step 11:

Cut into slices and serve.

    Its took me quite some time to rethink my self after trying this very authentic dish,some people say this dish is legendary but i say its pure bliss. First the presentation is something to be mesmorised as it looks beautiful, secondly the smell really gets you going as it opens up your senses, taste wise is something on the cool side of things as it really melts in your mouth giving you that summer breeze and clover texture, on the pallet i taste hints of chocolate and nut with wild berry but over all this is something special. BEST OF LUCK PINAR……

    This is not fair, you making suboregi and not share with us 🙂 , very difficult to do and needs lots of effort to rolling to pastry sheets, ether my mum didn’t try at all.
