Christmas Tree Cupcakes By Betigul From Sales

Cupcakes are welcome at any time of year, but Christmas Cupcakes are extra special.  Also Christmas-themed cupcakes are just as fun to make. Here’s a forest of sparkly, festively adorned strawberry trees topped with silver and white stars. These beautiful and classy little cakes make lovely gifts, and kids will enjoy decorating them too.

Chocolate cupcake Ingredients: Makes 12 cupcakes

FLO031Wrights Self Raising Flour 100gr

SPI028 Tate Lyle Demerara Sugar 120gr

SPI323 Natco Almond Flakes 40g almonds flakes

SAN013 Kerrymaid Spread 40g butter at room temperature

EGG008 Free Range Medium Eggs 2eggs

DAI028 Cravendale Milk 120ml whole milk

20g cocoa powder

¼tsp of vanilla extract

20 gr Milk chocolate chips

Ingredients

For the decoration:

Strawberry

Green Icing

Vanilla frosting

Green food colouring

Coloured sugar balls

Edible white or silver sugar stars

Step 1:

Preheat the oven to 180C/160C fan/ gas 4. Whisk together the eggs and sugar until light and fluffy.

Step 2:

Gradually add the flour, butter, cocoa and milk gently folding the mixture together. Finally, stir through the vanilla extract, chocolate chips and almond flakes.

Step 3:

Place 12 paper cupcake cases into a muffin tin and divide the mixture between them.

Bake on the middle shelf of the preheated oven for about 20-25 minutes, or until golden, well risen and a skewer inserted into the middle of the cakes comes out clean. Remove from the oven and leave to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Step 5:

Put half of the frosting, green icing in a bowl and add green food colouring. Mix well.

Step 6:

Now ready for decoration. Once the cupcakes are totally cool, put green frosting top of the cake and place strawberry gently to give Christmas tree shape.

Step 7:

Fill the piping bag with the green frosting and, working from the centre, pipe pointed branch shapes towards the edges of the cupcake. Keep doing this, turning the cupcake as you go, until you have the top of a tree. Repeat with the next layer up, making the branches shorter. Carry on with more layers, making the branches ever shorter as you get to the top of the tree.

Step 8:

When you finish all cupcakes, dust with green glitter and decorate with coloured sugar balls. Top with a white or silver star.
