Piernik with Disaronno – Ginger and Disaronno Cake By Nina From Sales

This is traditional polish Christmas cake filled with all of the brilliant Christmas flavours… ginger, orange and walnuts. It is being said that without this cake on the table Christmas cannot go ahead! This recipe is a quick one as the traditional one takes up to 6 weeks to do which requires way too much patience for my likingJ. Nevertheless if you have enough time it’s worth to wait xxx

4 glasses of plain flour

2 teaspoons of bicarbonate soda

SPI499: 1.5 glass of granulated sugar

MIS103: 2 eggs

SPI388: 3 teaspoons of ground ginger

SAU093: 4 teaspoons of cocoa powder

baking margarine (could use flora)

DAI006: 2 glasses of semi skimmed milk

jar of jam (sour fruit like plum will be perfect)

crushed walnuts

orange peel

SPI186: almond flavouring

5 dessert spoons of disaronno (can use rum or amaretto instead – only for the brave ones 🙂  )


Step 1:

Melt baking margarine (make sure you do this slowly as not to get it to the boiling stage) – wait for it to cool.

Step 2:

Mix plain flour with bicarbonate of soda, add ground ginger, eggs and melted margarine, mix everything and keep adding rest of the ingredients- sugar, cocoa powder, almond essence, milk and jam.



Step 3:

At last but not the least add Disaronno, peel from 2 oranges and crushed walnuts.

Bake it for 50-60 min- cover with foil for the last 10 min as the top may get a bit burnt otherwise.



Step 4:

The remaining cake mixture you can use for little biscuits.

Just put a thin layer on a baking tray and when baked, using various shaped molds cut the cakes.



Step 5:

Sprinkle with icing sugar or cover with melted chocolate.


Step 6:


Melt 125gm of butter and 120gm of dark chocolate.

You can add 4 teaspoons of honey to get rid of the bitter taste of chocolate.



Step 7:

Cut the cake and spread the jam on both sides.


Step 8:

Cover the cake with the chocolate sauce this will create and sprinkle coloured sugar strands or any other decoration you have available on top.
