Aegean Stuffed Peppers By Gokhan From Product Group

 Practically, it is baked dish with pre-cooking. The mixture of beautiful stuffing and fresh peppers creating an amazing vegetarian dish. Stuffing peppers has been a method of cooking in both sides of the Aegean sea for ages. you can make it either with adding minced meat in the mixture or as a vegetarian option. Different nuts and herbs can be used in the stuffing mixture with long grain rice. Actually, using feta cheese in the mixture is more common in Greece. In Turkey, we make it without feta and enjoy it with yogurt instead. In this version of the recipe; I am using roasted pistachios to give it a nutty texture, dill and mint for freshness and beautiful smell. Finally, give it a kick with feta cheese. Using feta in the dish makes the herbs react with the cheese in an interesting and delicious way.


2 vine tomatoes,

VEG026: 6 large peppers any colour,

100g shelled pistachios,

3 small or 2 large onions,

OIL062: Olive oil,

4 cloves of garlic,

300g long-grain and wild rice,

1 tablespoon dried oregano,

3 table spoons of Sun Dried Tomato Pesto

1 tea spoon of Tabasco,

Sea salt and ground black pepper,

600ml chicken stock,

CHE132: 200gr feta cheese, crumbled

Dill and mint, finely chopped,


Step 1:

Preheat the oven to 200C/gas 6. cut the tops of the peppers and put them to one side. Get rid of the seeds with a spoon. get a roasting dish which is deep enough to cover the peppers completely. In the meantime, you can roast the pistachios in the oven for 10 minutes or until you get the nutty smell.



Step 2:

Add 5 tablespoons of olive oil to a frying pan and put the following ingredients with the same order, first diced onion then garlic, juiced tomatoes, sun dried Tomato pesto, rice, oregano, Tabasco, sea salt and black pepper. Finally add the chicken stoke. Stir the stuffing constantly until it absorbs almost all the water.



Step 3:

Remove the pan from the heat and add the cut herbs and crumbled feta. Stir everything together. Get the roasting dish and start filling your peppers. Place the peppers vertically into the roasting dish and drizzle the rest of the chicken stoke.



Step 4:

Cover the dish and leave it in the oven for around 1 hour and 20 minutes. You can serve it when it is still hot or as a cold dish with some extra drizzled olive oil.
